I am considering taking a class in medical interpreter training. It’s a three credit class and I need to know if there is a minimum number of credits I need to take in order to receive federal student aid. I can’t afford this on my own!

The minimum credits you would have to take to receive Title IV funding is usually 6, if each class is worth 3 credits, or, whatever is considered part-time.
You cannot receive aid for taking one class. Most likely you’d need to take two classes.
Yes, if you qualify for a Pell grant, you can receive this grant for as little as being enrolled in 1 credit hour. It may not be much money, but it is something. Unfortunately, not everyone qualifies to get the Pell grant and you can’t get a loan for just one class.
